How long should a summer bulk ferment actually take?
A hot kitchen can halve your bulk fermentation. Here is how to work the timing back from your dough temperature so you stop over-proofing in the heat.
Every summer I have the same conversation with someone at the pub. They followed a recipe to the letter, the one that has worked all winter, and their loaf came out flat and gummy with a crust like a cracker. Nine times out of ten it is not the recipe. It is the kitchen. A dough that needs four hours of bulk in a cool March kitchen can be done in a little over two when July rolls in, and if you are not watching, it sails straight past ready into over-proofed.
Why heat speeds everything up
Fermentation is just yeast and bacteria eating sugars and giving off gas, and like most biology it runs faster when it is warm. The rough rule bakers use is that activity roughly doubles for every 10 degrees Celsius you go up. So dough at 26C is fermenting close to twice as fast as the same dough at 21C. Your recipe's timings were almost certainly written for a temperature you are no longer baking at.
The number that matters is dough temperature, not room temperature. Dough sitting in a warm kitchen, especially after a good mix, often runs a couple of degrees warmer than the air. Measure the dough itself with a probe and you take all the guesswork out.
Working the timing back from temperature
Rather than trusting a fixed number of hours, start from your actual dough temperature and let the maths do the adjusting. On a 26C day with a lively starter, do not be surprised when it tells you to shape a good deal sooner than you are used to. Trust the dough over the clock: a 30 to 50% rise, a domed and jiggly surface, and a few bubbles at the edges matter more than any single time.
If the calculator says your bulk will be uncomfortably short to babysit, cool the dough down. Mix with cold water, or move the tub to the coolest corner of the house. Slower fermentation in summer gives you both a saner schedule and better flavour.
A schedule you can actually live with
My summer default is to build the dough cooler on purpose, aim for a dough temperature around 23 to 24C, and use a cold retard in the fridge overnight for the final proof. That way the fast daytime bulk happens while I am around to watch it, and the long slow bit happens while I sleep. It is the same trick that lets you fit a proper sourdough around a normal life, heat or no heat.
