How it started

From a starter jar on a London kitchen shelf

I work in tech, so when I got into sourdough I did what any developer would do: I turned it into a problem to solve. There are variables everywhere in bread making. Temperature, hydration, fermentation time, flour protein, preferment ratios. Most people treat them as guesswork. I wanted to understand them properly.

It started with a basic fermentation calculator I built for myself. Then a baker's percentage tool. Then another tool. Then the idea of an AI coach that actually understood bread science — not just pattern-matching, but the real reasoning behind every variable.

I'm still based in London, still making bread on a Friday evening with some house music on, still thinking about fermentation at odd hours. DoughRise is just what happened when I took that obsession seriously enough to build something proper.

Most baking content teaches recipes. We want to teach you to think.
