The relationship between yeast, time and temperature follows a predictable curve: less yeast and more time, or more yeast and less time, and temperature shifts the whole curve depending on how warm or cool your kitchen (or fridge) is running.

The Q10 rule: why yeast amount halves every 10°C
Yeast activity roughly follows a Q10 relationship: for every 10°C rise in dough temperature, the fermentation rate roughly doubles, which means you need roughly half as much yeast to hit the same fermentation time. Drop the temperature by 10°C and you need roughly double the yeast instead. The calculator's baseline is 0.2% instant yeast for a 12-hour bulk ferment at 20°C, and it scales up or down from there using that doubling relationship.
It's a genuinely useful mental shortcut at room-to-warm kitchen temperatures, but it starts to break down in the fridge. Below about 10°C, yeast activity slows more sharply than a clean exponential curve predicts, since the yeast is approaching dormancy rather than just fermenting more slowly, so treat calculated figures for cold retard timings as a starting point to check against, not a fixed rule.
Worked example: a 4-hour same-day dough at 24°C
- IDY: about 0.455% of flour weight
- ADY: 0.455% × 1.5 ≈ 0.683%
- Fresh: 0.455% × 3 ≈ 1.365%
- For 500g flour: roughly 2.3g IDY, 3.4g ADY, or 6.8g fresh yeast
Compare that to the 12-hour, 20°C baseline above and you can see the doubling relationship at work: a warmer, faster dough needs noticeably more yeast to hit a much shorter time.
Common mistakes
Treating the Q10 rule as exact below 10°C
The doubling relationship is a solid approximation in the temperature range most kitchens sit in, but cold retard fermentation (fridge temperatures) slows down faster than the clean exponential curve suggests, since yeast is nearing dormancy rather than just fermenting more slowly. Treat cold figures as a starting estimate rather than gospel.
Forgetting the yeast form when copying a percentage
0.2% means something different depending on whether it’s IDY, ADY or fresh yeast. Copying a percentage from one form into a recipe that expects another without converting (roughly 1 : 1.5 : 3 for IDY : ADY : fresh) will leave the dough under- or over-yeasted.
