I had a good playlist going, something slow and rolling that had been sitting in my production folder for weeks, and I'd just done a feed on my starter after a couple of days of neglect. The plan was a whole wheat sourdough sandwich loaf, the kind you actually want to slice for lunch rather than just photograph and post online. And the question I kept coming back to, the one that had quietly wrecked a previous version of this same bake, was how long to let it autolyse.
That earlier loaf had been dense in the middle, with a crumb that never quite opened up the way whole wheat can when it's handled right. I suspected I'd been too impatient with the autolyse, rushing into adding the starter and salt before the flour had properly hydrated. This time I was going to actually run the numbers before touching anything, which meant pulling up the Autolyse Calculator before I even filled the kettle.
Why Whole Wheat Needs a Longer Conversation with Water
Whole wheat flour isn't just a mood. It behaves differently from white bread flour because it contains the bran and germ, and both of those things absorb water at a slower rate than the endosperm does. The bran in particular can feel like those sharp little particles that physically cut through developing structure if you don't give it time to fully soften. A short autolyse on a white flour loaf might be twenty minutes and you'd never notice the difference. With whole wheat, particularly at higher inclusion rates, that window genuinely matters.
My formula for this loaf was 75% strong white bread flour and 25% wholemeal, total dough weight of 900g, targeting a single 900g loaf tin. At 75% hydration, this is a manageable summer dough that doesn't turn into a puddle when your kitchen is sitting at 27°C. Here's how it broke down:
- Strong white bread flour: 375g
- Wholemeal flour: 125g
- Water (autolyse): 350g (at around 27°C, not the full 375g)
- Sourdough starter: 100g (added after autolyse)
- Salt: 10g (added after autolyse)
- Remaining water: 25g (held back for salt dissolution)
Total hydration including starter: 75%. The starter itself is 100% hydration, so accounting for that shifts things slightly, but the calculator handles all of that when you put the actual numbers in.
Running the Numbers Before Touching the Dough
I plugged everything into the Autolyse Calculator: 25% wholemeal inclusion, kitchen temperature 27°C, target hydration 75%, flour weight 500g. The calculator came back with a recommended autolyse window of 45 to 60 minutes.
At 27°C with a 25% wholemeal inclusion at 75% hydration, the Autolyse Calculator recommended 45 to 60 minutes of rest before adding the starter and salt. In my earlier failed bake I'd autolysed for 20 minutes at roughly the same temperature. The bran in the wholemeal needs significantly longer to hydrate at summer kitchen temperatures than at cooler ones, because the water is more fluid and moves faster but the bran still has a finite absorption rate. Going too short meant the bran hadn't softened, which gave me the dense, slightly gummy crumb I was trying to fix. The calculator essentially confirmed what went wrong and gave me the window I needed to do it right.
The thing that surprised me was the temperature note the calculator flagged. In summer heat, autolyse actually wants to be on the shorter end of any recommended window if you're worried about pre-fermentation kick-starting before you're ready. But with a wholemeal inclusion this high, the flour hydration need genuinely outweighs that concern, so 45 to 50 minutes was the call rather than pushing to an hour.
The Autolyse, in Practice
I combined the 500g of flour with 350g of water (held back 25g for later) and mixed until there was no dry flour left. Nothing fancy, just a couple of minutes by hand until it came together into a rough, shaggy mass. Then I covered the bowl with a damp cloth and left it on the worktop. I set a timer for 48 minutes, right in the middle of the calculator's recommended window, partly because I wanted to account for the heat but also because I had a delivery arriving that I didn't want to miss.
When I came back to it, the change in texture was noticeable. The dough had smoothed out without me doing anything to it. The bran particles felt incorporated rather than sitting on the surface like little splinters. It stretched differently too, more extensible, less snappy. This is the whole point of the process, and it's genuinely satisfying when you can feel it working in your hands rather than just reading about it.
Adding the Starter and Salt
I added the 100g of starter and dissolved the 10g of salt in the remaining 25g of water before incorporating both into the autolysed dough. This is the bit where people sometimes rush, squeezing everything in and immediately starting their fold sets. I gave it a gentle lamination pass instead, spreading the dough out on a wet surface, layering the starter and salt water across it, then folding it back on itself a few times. Full incorporation took about four minutes.
Dissolve your salt in the reserved water before adding it to an autolysed dough, even if the amounts seem small. Salt that lands in concentrated form on already-developed dough can tighten patches unevenly. Dissolving it first gives you consistent flavour and structure distribution across the whole mass, which matters more on a sandwich loaf than a rustic miche where irregular crumb is part of the charm.
Summer Bulk: Short, Warm, Watchful
With the kitchen at 27°C, I wasn't going to get a slow, long bulk. I expected three to four hours maximum before the dough would be ready to shape, which is fine for a sandwich loaf where you want a relatively even crumb anyway. I did four sets of coil folds at 30-minute intervals for the first two hours, then left it alone to finish. The dough came alive quickly, which is the gift and the risk of summer baking.
By the time I was shaping it into a tight log for the tin, the dough had a completely different character from my earlier failed attempt. It was extensible but had good tension. It didn't tear at the surface when I applied pressure. I put that almost entirely down to the autolyse time being right this time. The bran had softened properly, the structure had built more evenly, and the whole thing felt cooperative rather than resistant.
The Tin, the Cold, the Bake
Shaped it into a 900g loaf tin, covered it tightly with a shower cap (the single most useful bit of kitchen kit that costs almost nothing), and put it in the fridge overnight. I baked it the following morning at 230°C in a conventional oven for 20 minutes covered with foil, then another 25 minutes uncovered to build the crust. The internal temperature when I pulled it was 97°C.
I let it cool for two full hours before cutting, which is genuinely the hardest part of this whole process in August because the smell is absurd. The crumb was open, even, with a slight nuttiness from the wholemeal that played nicely against the tang. No gumminess in the middle. No dense band under the crust. Just a good, honest sandwich loaf that worked the way it was supposed to.
