Why won't my pizza dough stretch

Almost always the gluten is too tight, either because the dough is still cold from the fridge or it hasn't had a proper bulk ferment. Bring it fully to room temperature for 1 to 2 hours and rest it 10 minutes between stretches. Cold, tense gluten fights you; relaxed gluten stretches on its own.

Get a stubborn ball stretching again

    Check the clock. If the ball came straight from the fridge, it needs 1 to 2 hours at room temperature before it will cooperate.

    Flour the bench lightly and press the ball flat with your fingertips from the centre out, leaving a 1.5cm rim untouched.

    Pick it up and drape it over your knuckles, letting gravity pull it wider. Rotate a quarter turn every few seconds.

    If it fights back and shrinks, lay it flat, cover it, and rest it 10 minutes. The gluten relaxes on its own; you don't need to force it.

    Come back and stretch again. It should go noticeably further with no extra effort the second time.
