The Q10 rule,
in plain terms
Yeast activity roughly doubles for every 10°C rise in temperature, and roughly halves for every 10°C drop. DoughRise uses this Q10 rule to work backwards from your chosen fermentation time and temperature to the exact yeast percentage needed, whether that is instant dried, active dry, fresh, or a sourdough starter. The reference point is 0.2% instant dried yeast at 20°C for a 12 hour bulk ferment. Everything else scales from there.
