What is vital wheat gluten?
Vital wheat gluten (VWG) is a dry powder extracted from wheat — approximately 75% pure gluten protein. Adding it to weaker flours raises protein content, giving dough more strength, extensibility, and structure.
When to use it: upgrading plain flour for bread baking; strengthening whole grain flours (rye, spelt) which have weak gluten; high-hydration doughs needing more structure.
Caution: More than ~5% baker's % (50g per 1kg flour) can make dough tough and inelastic. Use the minimum needed to reach your target.

Vital wheat gluten is the dried, concentrated protein extracted from wheat flour. Adding it to lower-protein flour increases the effective protein content, which improves gluten network strength, trap more gas during fermentation, and supports a better rise. It is particularly useful for wholemeal and rye flours, which have high fibre content that interferes with gluten development despite adequate protein.
A typical addition is 1 to 2g of VWG per 100g of flour. Each gram per 100g raises the protein content by approximately 0.6 to 0.7 percentage points. To bring plain flour at 10% protein up to bread flour strength at 13%, you need roughly 4 to 5g of VWG per 100g of flour. The calculator does this maths precisely for any flour weight.

Why the maths isn’t just “add 1% protein for 1% you want”
Vital wheat gluten isn’t pure protein, most tubs sit at 70 to 85% protein, with 75% a reasonable default for mainstream UK brands. That means you’re not doing a straight swap when you calculate an addition, you’re diluting your flour’s existing protein with a much more concentrated one. The required amount grows sharply as your target creeps closer to the VWG’s own protein ceiling, which is why the same 3 percentage point jump costs noticeably more VWG when you’re pushing a flour from 13% to 16% than from 8% to 11%. Push the target high enough and the calculator will tell you it’s mathematically impossible, at which point blending two flours is the smarter route rather than loading up on gluten.
Physically, nothing exotic is happening. Gliadin and glutenin, the two wheat proteins that link up into the gluten network when mixed with water, are exactly what dried VWG is made from. It rehydrates in the dough the same way your flour’s native protein does, so you’re simply adding more raw material to a system your dough already runs on. That’s especially useful with wholemeal and rye, where bran physically shreds the gluten strands as they develop, VWG doesn’t repair that damage, it just gives the network more capacity to absorb it.
Worked example: boosting a bag of plain flour to bread strength
Say you’ve got a 1kg bag of plain white flour in the cupboard, tested at 10% protein (check the pack, most UK plain flour sits at 9 to 11%), and you want to bring it up to proper bread flour strength at 13% for a weekend sourdough bake. Your VWG tub is labelled 75% protein, the calculator’s default.
- Protein gap to close: 13% − 10% = 3 percentage points
- VWG needed: 1,000g × 3 ÷ (75 − 13) = 1,000g × 3 ÷ 62 ≈ 48.4g
- Total flour after adding: 1,000g + 48.4g = 1,048.4g
- Baker’s %: 48.4 ÷ 1,000 × 100 ≈ 4.8%, just under the calculator’s 5% caution line
That 4.8% is close enough to the ceiling that I’d whisk the VWG through the dry flour properly before adding any water, rather than dusting it on top. Add it after an autolyse and it tends to clump against the already-hydrated flour, giving you a patchy boost instead of the even one you paid for. Common VWG calculation mistakes
Swapping flour for VWG instead of adding it
The calculator's maths assumes VWG goes in on top of your flour weight, not in place of some of it. Replace part of the flour with VWG instead and you end up with a smaller batch and less total gluten-forming material than you planned for, undermining the exact strength you were chasing.
Assuming every tub is 75% protein
VWG brands genuinely range from 70 to 85% protein. Leave the calculator on its 75% default when your actual tub is 70% and your real result will land short of the target you calculated for. Check the nutrition label and adjust the Advanced setting before you calculate.
Pushing past 5% baker's percentage in one go
Once your VWG addition is above roughly 5% of your flour weight, dough gets noticeably tougher and denser. If you're chasing a big jump in protein, split it across a blend of two flours using the flour protein calculator instead of dumping it all into one VWG addition.
