How It Works

How the batch and yield calculator actually scales your bake

Scale mode works off a single ratio: divide your target item count by however many the recipe currently makes, and that one number, the scaling factor, gets applied to every ingredient in the formula. Enter a 2-loaf recipe and a 16-loaf target and the calculator returns 8.0×, then multiplies your flour weight by that factor. This works cleanly because baker's percentages are ratios in the first place. If water sits at 70% of flour and salt at 2%, those relationships don't care whether you're making 2 loaves or 20, provided you scale every ingredient by the same factor rather than rounding each one separately.

Yield mode runs the maths the other direction. It takes your total mixed dough weight, subtracts a waste percentage for whatever sticks to the bowl, the scraper and your hands, then divides what's left by your target item weight. The result is rounded down, because you can't bake three quarters of a loaf, and whatever doesn't divide evenly gets shown as leftover dough. That waste percentage matters more than it looks: at 5%, a 6kg batch loses 300g before you've portioned anything, and if your target count is tight, that's the difference between hitting your number and coming up one loaf short.

Worked example: scaling up for a market stall

  • Original recipe (makes 2 loaves): 500g flour, 350g water (70% hydration), 10g salt (2%), 100g starter (20%). Total dough: 960g, or 480g per loaf.
  • Scale mode, 2 loaves → 16 loaves: scaling factor = 16 ÷ 2 = 8.0×. New flour = 500g × 8 = 4,000g; water 2,800g; salt 80g; starter 800g. Total dough: 7,680g, which is exactly 480g × 16 on paper.
  • Yield mode check with a realistic 5% waste allowance: usable dough = 7,680g × 0.95 = 7,296g. At 480g per loaf that's 15 loaves (7,200g), with 96g left over, one loaf short of the 16 you scaled for.
  • To hit 16 loaves cleanly, scale the recipe for 17 instead, or build the waste percentage into your target loaf weight from the start.

The gap isn't a rounding error, it's the waste allowance doing exactly what it's meant to do. Scale mode multiplies ingredients; it has no idea about bowl residue or bench trimmings. Rounding each ingredient separately

Scale mode applies one multiplication factor to keep every ratio intact, and that's the whole point of working in baker's percentages. If you round the flour up and the salt down "to make the numbers neater", you'll quietly shift your hydration and salt percentage away from the original recipe. Trust the single factor, and round only the final gram weights, never the percentages themselves.

Forgetting the waste buffer when a headcount matters

Scale mode tells you how much dough a formula makes; it doesn't know about bowl residue or bench trimmings. If you're baking to an exact number, a market stall, a wholesale order, a bake sale, run Yield mode afterwards with a realistic waste percentage (5% is a sensible default) before you commit to a headcount you can't actually hit.

Treating mixing time as if it scales the same way

Doubling or tripling a batch doesn't double the time it takes to develop gluten by hand; a bigger mass of dough needs more folds and more contact time to get the same structure throughout. If you're scaling up significantly and mixing by hand, budget extra minutes, or split the dough across two bowls and combine at the end of bulk.

How do I scale a bread recipe up or down?

The easiest method is to work in baker's percentages rather than fixed gram amounts. Once every ingredient is expressed as a percentage of total flour weight, you can scale the flour to any target and multiply all other ingredients by the same ratio. The batch/yield calculator does this automatically, using your original recipe and target loaf count or total dough weight, and it gives you new gram amounts for every ingredient.

What is dough yield and why does it matter?

Dough yield is the total weight of dough as a percentage of flour weight. A recipe with 1000g flour, 750g water, 20g salt, and 200g starter gives a dough yield of 1970g. Knowing your yield helps you plan batch sizes, calculate oven loads, and price your baked goods accurately since you can work backwards from target loaf weight to required flour and water quantities.

How much dough do I need for one loaf?

A standard 900g sandwich tin loaf uses around 850–950g of dough. A medium sourdough boule baked in a 24cm Dutch oven works well at 800–900g. Allow for roughly 10–15% weight loss during baking as moisture evaporates. How many loaves can I make from 1kg of flour?

At typical baker’s percentages, say 70% water, 2% salt and 20% starter, 1kg of flour gives you roughly 1,920g of total dough. That splits cleanly into four 480g loaves, or two 800g tin loaves with around 320g of dough spare for a small extra bake like a pizza base or a batch of rolls. Does scaling a sourdough recipe change the fermentation time?

Not directly. Bulk fermentation speed is driven by dough temperature, hydration, and the ratio of starter to flour, all percentages that stay identical when you scale a recipe correctly. What can shift slightly is dough temperature itself: a larger mass of dough has less surface area relative to its volume, so it loses heat more slowly and can occasionally run a touch warmer through bulk than a small batch left in the same spot. It’s a minor effect next to actual temperature control, but worth knowing if a big batch finishes noticeably earlier than you expected.

How much dough do I need for a market stall or bake sale?

Work backwards from your target item count and weight using Scale mode, then always run Yield mode afterwards with a realistic waste percentage before committing to a number you’re promising customers.
