How the fermentation calculator actually predicts your timing

Behind the numbers, the calculator runs on two levers stacked on top of a fixed baseline. That baseline is 12 hours of bulk fermentation at 0.2% yeast and 20°C, roughly what a lot of UK kitchens sit at through spring and autumn. Change the temperature and it applies the Q10 rule: fermentation speed roughly doubles for every 10°C you go up, and halves for every 10°C you drop. Change the yeast percentage and the relationship is a straight inverse: double the yeast and you halve the time; halve the yeast and you double it. Both effects stack, so a warm kitchen and a heavier yeast dose compound quickly, sometimes turning a planned overnight bulk into something ready before you’ve finished your coffee.

Proofing time is calculated as a fraction of bulk, not a fixed number, because the dough’s already partly developed by the time it’s shaped. Below 24°C the calculator uses 25% of your bulk time as the proof window; above that it drops to 20%, since warmer dough proofs proportionally faster once it’s had a head start from a warm bulk. There’s also a floor of 30 minutes on both bulk and proof, so even an aggressive combination of high yeast and high heat won’t hand you an unrealistic four-minute rise. None of this replaces watching the dough itself. Treat the clock as your starting point and the poke test as your final word, because two kitchens at the same thermostat reading rarely ferment identically.

Worked example: an evening bulk from a Tuesday-night mix

Say you’re mixing dough after work, 500g flour, 70% hydration, 0.3% yeast, 2% salt, kitchen sitting at a fairly ordinary 21°C.

  • Water: 500g × 70% = 350g
  • Yeast: 500g × 0.3% = 1.5g. Salt: 500g × 2% = 10g
  • Total dough weight: 500g + 350g + 1.5g + 10g = 861.5g
  • Bulk fermentation: the 12-hour baseline adjusted for 0.3% yeast and 21°C works out to roughly 7.5 hours
  • Proof (21°C is under the 24°C cutoff, so 25% of bulk): roughly 1.9 hours
  • Total from mix to bake: roughly 9 hours 20 minutes

Mix at 7pm and you’re shaping around half past two in the morning, ready to bake by half four, which only really works if you’re after dough for a weekend lunch bake rather than dinner that night. Nudge the yeast to 0.5% instead and the whole thing compresses to under six hours, ready comfortably before bed.

Treating room temperature as dough temperature

The calculator asks for room temperature, but what actually drives fermentation speed is the dough’s own temperature, which is often 2 to 4°C warmer than the room straight after mixing thanks to friction from kneading or stand-mixer work. Measure the dough itself with a probe thermometer once it’s mixed, not the kitchen. Over a nine-hour bulk, a few degrees of difference compounds into finishing an hour or more earlier than the calculator suggested.

Underestimating how much a small yeast change moves the clock

Because yeast and time are inversely related, nudging your yeast up from 0.2% to 0.4% doesn’t shave a bit off your schedule, it halves your bulk time outright. A ‘pinch more’ yeast when you’re in a rush changes your schedule more than most bakers expect. Adjust in small steps and re-check the calculator rather than guessing.

Confusing the end of bulk with a finished dough

Bulk fermentation and proofing are two separate stages with two separate numbers on this calculator, and skipping straight from bulk to the oven misses the shaped proof entirely. Shape your dough once bulk is done, then give it the calculator’s proof window before baking. Rush that second stage and the loaf springs unevenly in the oven, or worse, collapses because the yeast hadn’t finished building structure in its final shape.

At 1% yeast and 24°C the same dough might be ready in 2 hours. How do I know when bulk fermentation is actually finished?

Look for a 30 to 75% increase in volume depending on your recipe, a slightly domed and jiggly surface, and visible bubbles at the edges of the container. The poke test is the most reliable check: press a floured finger about a centimetre into the dough. If it springs back slowly and leaves a slight indent, it’s ready. If it springs back instantly, give it more time; if it doesn’t spring back at all, it’s overproofed.
Can I slow fermentation overnight in the fridge?
Yes, this is called cold retarding and it’s one of the most useful tricks in home baking. Dropping dough to fridge temperature (3 to 5°C) extends bulk fermentation to 16 to 24 hours, which develops more flavour without the risk of over-proofing on the counter. Mix your dough in the evening, pop it straight in the fridge, and shape the next day when it suits you rather than the clock.
