Snapping back to a small circle is the gluten telling you it hasn't relaxed yet, usually because the dough is under-rested or too cold. Stop fighting it, lay it flat, cover it, and give it another 10 to 20 minutes before trying again.

Get elastic dough to hold its stretch

    Stop stretching the moment you feel real resistance. Fighting tense gluten just tires your arms and risks a tear.

    Lay the dough flat on the bench, cover it loosely, and walk away for 10 to 20 minutes.
